8 Maraschino cherries
15mls Passionfruit pulp
barspoon of vanilla sugar
2 lemon wedges
30mls South Gin
15mls Lemon Z
5mls Dubbonet
Method
> Add cherries, passionfruit pulp, sugar and lemon wedges to a boston
> Shake well
> Add Gin, Lemon Z and Dubbonet
> Shake and strain into pink vanilla sugar rimmed martini glass, garnish with a maraschino cheery on the rim.
Flamed lemon zest over the coktail and around glass to bring out the nose.
